Nougat from Sault
A traditional speciality of the Plateau d'Albion in Haute-Provence, it has been made by hand by the Boyer family firm since 1887.
To make nougat, lavender honey is whisked with egg whites and cooked in copper pans, and at the end vanilla syrup and local almonds are added.
The nougat is presented between two sheets of rice paper and comes in two versions: white, loved for its creamy, soft texture, and black, for its subtle caramelised notes.
A visit to the little Boyer museum in Sault tells you more about the history of this delicious treat and how it is made.
The Sault shop is open every day from 7.30am to 7pm.

Sweet and colourful
Who doesn't know Haribo sweets? But did you know there is a real Haribo sweet museum in Provence? The museum, called the "Musée du Bonbon Haribo", is in the town of Uzès and is an absolute must for anyone with a sweet tooth.
The museum takes you on a sweet journey through the history of Haribo, from the founding of the company in 1920 by Hans Riegel Sr. to the creation of the famous gummy bears and other sweets. Find out how the sweets are made, admire the old packaging and enjoy the sweet smell that fills the museum.
